Cucumber, Orange and Red Onion Salad with Jalapeño Vinaigrette

1 large orange, peeled (pith removed) and cut into bite-size pieces
1 cucumber, peeled, sliced lengthwise and cut into 1/8-inch slices
1/3 red onion, thinly sliced
1/4 cup chopped fresh mint
Toss orange, cucumber and onion slices together in a bowl. Add jalapeno vinaigrette, tossing to combine. Add mint just prior to serving.
For jalapeño vinaigrette:
Juice of 1/2 lime
2 tablespoons rice wine vinegar
1/2 teaspoon brown sugar
1 tablespoon canola oil
1 jalapeno pepper, seeds removed, finely minced
Salt, to taste
Pepper, to taste
Combine all ingredients, whisking to emulsify.
