Date Nut CakE

2 1/2 cups self-rising flour, divided
5 cups chopped pecans
2 (8-ounce) boxes chopped dates
1 cup coconut flakes, Baker’s Angel Flake recommended
1 1/2 cups sugar
3 eggs
3 tablespoons butter
1/4 cup grape juice
1 tablespoon vanilla flavoring
Non-stick baking spray, Baker’s Joy recommended

Sift 1/2 cup flour over pecans, dates and coconut; mix with hands. In a separate bowl, combine sugar, eggs, butter, grape juice and vanilla flavoring with mixer. Pour over first mixture; mix well with hands. Pour into a large tube pan coated with baking spray. Bake at 300°F for l hour and 15 minutes.
