Lemon-Berry Cheesecake

1 (8-ounce) package cream cheese
1/2 cup sweetened condensed milk
2 tablespoons lemon juice
1 teaspoon lemon zest
1/4 teaspoon vanilla extract
1/2 cup heavy whipping cream
1/3 cup sour cream
1/2 cup shortbread cookie crumbs
1/3 cup fresh berries

Place cream cheese, sweetened condensed milk, lemon juice, lemon zest and vanilla in a large bowl. Beat on medium speed for 30 to 60 seconds, or until smooth. Beat in whipping cream on medium-high speed for 2 minutes, or until thickened. Fold in sour cream. Place 2 teaspoons of cookie crumbs into each serving dish. Layer with 2 tablespoons cream cheese mixture, 1 teaspoon cooled lemon curd and 2 tablespoons cream cheese mixture. Top with berries.

For lemon curd:

1 cup sugar
Juice of 3 lemons
Zest of 3 lemons
4 eggs
1 stick butter, melted

Combine all ingredients in a double boiler, cooking until thick. Let cool.
