Perfect Pineapple Popsicles

These popsicles are economical and easy to make, and require no special equipment or molds. This perennial summertime favorite is as easy as filling small dispos- able cups with pink lemonade and fruit, but with these ingredients, even adults will clamor for more.


3 cups fresh pineapple, cut into chunks 1/2 cup fresh lime juice
1/4 teaspoon salt
2 cups sugar
Pinch cayenne pepper
Popsicle sticks

Puree the pineapple with an immersion blender or in a food processor, keeping some texture. With a spoon, stir in lime juice, salt and sugar until dissolved. Add cayenne pepper. If using small disposable paper cups, freeze cups for 30 minutes to firm. Fill popsicle molds or cups with mixture. Freeze for 30 minutes to 1 hour, or until solid enough to hold popsicle sticks. Place a popsicle stick in each cup, then return to freezer until firm, about 3 to 4 hours. Dip the molds or cups in lukewarm water to loosen the ice pops, remove and serve.
